  • Tasting Notes:  A beautiful portrait of spice and fruit, this blend focuses on just how expressive old whiskey can be. The nose is packed full of brioche and creme brulee. A note that I love in champagne wine is a complex and layered sweetness that's like a brulee or brioche and I immediately found that sensation as we were putting together test blends. The nose Is full of brulee and brioche, caramel and honey with a hint of balancing acid and fruit. Red berries and tobacco pop on the palate, maple and caramel and brulee continue while barrel char, a hint of limestone and slate balance the indulgent sweetness. The palate is viscous, it's a little less "chewy" than Batch 2, due to less oak pulling through and the presence of balancing fruit and acidity. ABV is sneaky, for 60% it's a mild monster, with the Amarone and apple pulling the weight of a bright palate. Tons of caramel candies, red berries, more brioche and sweet oak with a hint of char. Long buttery finish that skirts drying in favor of a juicy, balanced, creme brulee exit.
