- Tasting Notes: The nose is pure praline and warm caramel, brown butter and honey. The palate evolves into apple butter, warm baking spice, cinnamon bun filling and a big maple note. Medium tannin influence, I liked this barrel in the batch for its integration of sweetness and viscosity on the palate without dumping in any bitterness or cinnamon in with the tannin. Palate is rich and buttery, finish is long and honey, toffee and maple driven once more. One dash of cherry bitters, one dash of black walnut bitters and a bar spoon of dark simple or maple and your spring old fashioned is perfect.
