  • T8ke's Tasting Notes: I selected this barrel for its balance - not too woody, not too malty, not too wine driven and it delivers: rich nose with cocoa, cherry cordials, espresso and fresh croissants, toffee, light pepper and lovely oak. The palate is viscous and layered, natural and complex, blackberry, cherry tart, sweet cream and honey meets toffee, a hint of pepper and lovely rich oak. The palate is long - my favorite part - expertly melds sweet port character with balanced oak, delicious baking spice and malt character that's layered and balanced.
