- T8ke's Tasting Notes: Delicious and rich, leaded with minerality and that pop of bell pepper and citrus, black pepper, lemongrass, air before rain, a hint of clay and loads of crisp, clean sweetness. The palate is rich, full of leather, plums and pear, citrus and pepper, layers of minerality and honey. The minerality is bright, loads of slate and this limestone character with some melon, more plum and pear, lemon and lime. The wild agaves (madrecuixe, tepextate, bicuixe) pop with the bell pepper and bright, crisp, fresh notes while the espadin and coyote being in gorgeous sweetness, complexity and a touch of clay and paper.
