- T8ke's Tasting Notes: This barrel is a ride, it opens with caramel and rock candy notes, pepper and ginger, and a gob of maple. The palate is rich and punchy, the toasting here is past the point of that odd fake marshmallowy sweetness I often get. The toasting has brought out sweet oak, woody structure, tobacco and rich pepper, there's a great apple and pear component with that MGP rye spice, ginger and honey pop and it drinks with the mouthfeel and richness of a far higher proof pour. Thick and rich. The finish is long and spice driven, the sweetness of the palate gives way to more oak and some espresso, pepper and tobacco again.
