- T8ke's Tasting Notes: Big, bold, balanced, there's a lot going on here. The nose opens with maple, ginger, black pepper, wonderful oak and some vanilla bean, cocoa and light espresso. It's big and rich, but balanced - sweet, savory, spicy, oaky. The mouthfeel is layered, syrupy, rich. It's an easy drinker with the proof and there's enough oak and baking spice to bring the maple, brown sugar, toffee, cocoa and faint tough of espresso and char to balance. Long finish, sweet then spicy, packed with flavor.
