- Tasting Notes: I don't know why I don't try and blend more because this day of blending really showed off how well high rye and high wheat really work together. I love how opulent big wheat mashes sit on the palate but often times find that their finish can be a little short lived. On the other hand, high rye hangs on for ages. Both of those are preserved here with the nose opening big and bold, full of brown sugar, sweet cream, a prickle of pepper and a bold desserty character through and through. The palate is viscous and textured, it opens up nicely with gobs of sweet caramels, tobacco, honey, a touch of fig and berry, and rich vanilla cream. The high rye shows up, blending in cinnamon, nutmeg and a touch of clove to balance and satisfying oaky tannin. The finish is long lived, blending sweet caramels and butter cream and waffle batter with clove and a dash of cinnamon. hangs on for ages.
