- T8ke's Tasting Notes: Gorgeous and rich nose, full of brown sugar, cracked pepper, vanilla bean and a hint of espresso beans covered in chocolate. There's that evolution from sweet to savory to lightly bitter right back to sweet and satisfying once more as the oak, the brulee and the bourbon all settle in nicely. The palate is viscous, it's got a pleasant creaminess to it and the proof carries nicely through the oak and the maple character. Baking spices and lovely oak balance the maple and the sweet characters here lovely. Bit more oak than our first release, which is to say there's a bit more balance as well.
