Tasting Notes:

Opens with a dessert-driven nose, led by light brown sugar, vanilla custard, and a strawberry pastry.  At first, it feels bright, sweet, and almost playful, but with air it starts to deepen. The wheat becomes more noticeable, while the oak rises up and pulls the sweeter notes into darker territory. What began as bright leaning turns into hints of baker’s chocolate, darker brown sugar, and even a slight dark rum richness.

On the front palate, it starts lighter and sweeter like the nose. Vanilla custard, soft wheat grain, and a hint of strawberry lead the way. Then the whiskey begins to build. The mid-palate expands into the soft pastry sweetness, while the strawberry turns more tart and refreshing. 

The finish is the main event. From there, the pour takes a darker turn. Brown sugar, oak, hints of baker’s chocolate, and barrel spice begin to overtake the lighter dessert notes, creating an evolving ride from sweet and delicate up front to richer, older, and more oak-driven toward the back palate.

The result is a pour that starts as a sweet strawberry custard and pastry dessert and finishes as something deeper, spicier, and more mature.
