T8KE's Tasting Notes: This barrel brings in more sweetness than the first with less spice and an increase in brulee, caramels, flans, and all of the decadent sweet desserts we all love, especially in the fall. It reminds me a lot of creme brulee which are iconic to me for both the flavor and the texture. Big, sweet, caramels meet vanilla and caramelized sugars with little burnt bits. The texture is fat and creamy and nougaty, rich and silky. Long finish that focuses dessert over spice.
