The palate is rich, it's fat and layered with caramel, cinnamon, vibrant apple and acidity, the tart/sweet moment the juice of a fresh apple hits your palate. Long finish, the oak sits second to the vibrancy of the apple, the sweetness of the brown sugar and the toffee, a hint of pipe tobacco funk, spicy pepper and a touch of mocha, pear and one final maple send off.
